Vegan mayonnaise made from the water of chickpeas. Delicious as it is, or use it as a base for aioli, just add some garlic to it, or add sambal oelek for a spicy alternative. It’s so good with fried vegetable or make your own pommes frites in the oven and use the mayo as a dip.
Vegan mayo recepie:
Water from chickpeas, about 1 dl
Neutral oil, 1.75 dl
Vinegar, 1.5 tsp
Mustard, 1 tsp
Salt, 1/2 tsp
Mix all of the ingredients except the oil. For best result use a stick blender. Wait with the oil. Add the oil gently and slowly, while you’re mixing the ingredients. Pour the oil slowly while mixing and notice how the mayo gets thicker and thicker as you pour more oil in there. Continue to mix the ingredients untill you’ve added all of the oil. If the blend is not thick enough, add more oil (the same procedure as above – add the oil while using the blender).
Voila! Enjoy your mayo.
